Prepare the Auplex Kamado grill for indirect grilling, light the charcoal with a tanner, add the smoker blocks and install the stainless steel grill and wait for the temperature to rise to 125 degrees.
Make upper and lower air flaps to keep the temperature even.
Remove the film from the underside of the ribs, rinse and dry.
Mix all the dry ingredients in a bowl. Rub the ribs with the spice mixture.
Place on the grill and bake for 1 hour at 125 C., every 30 minutes. sprinkling with apple juice.
Just open the damper to raise the temperature to 130C. and bake for 1.5 hours, every 30 minutes. sprinkling with apple juice.
Coat the ribs with BBQ sauce and bake for another 30 minutes.

100 ml. apple juice
3-4 tbsp. sh. apple and whiskey flavored BBQ sauce
½ cup Himalayan salt
3/4 cup brown sugar
1/2 cup sweet paprika
3 tbsp. black pepper
2 tsp. garlic powder
4 tbsp. onion granules
1 tsp. cayenne pepper
2-3 pcs. Alder smoking logs
